Commercial Fridge Not Cooling? 5 Checks Before Calling Engineer

A commercial fridge not cooling is a food-safety clock, not a waiting game. Prep counters, upright Gastronorm cabinets and back-bar units in restaurants, pubs, takeaways, cafes, shops and hotels should hold roughly 1 to 5°C. If the display is 8°C and chicken in the well is 10°C, you already have an HACCP problem. This checklist is for duty managers. It is not a DIY gas recharge. Cold Direct repairs commercial plant only. Check 1: Probe product, not the door air

Air at an open door is always warmer than the core of a vacuum pack on the bottom shelf. Use a calibrated probe in the middle of a high-risk item. A commercial fridge not cooling is confirmed when product stays above 8°C after the door has been shut for twenty minutes. Note the time. EHO conversations go better when you have a log, not a memory. Hotels and restaurants should keep using their own HACCP sheets while the engineer is travelling.

Check 2: Condenser, grille and kitchen heat

A blocked condenser behind a takeaway counter or under a cafe espresso machine will make a healthy compressor look dead. Pull the kick plate if it is safe. Vacuum lint and grease. Leave air behind the cabinet. Do not hose a live tray. If the room is 32°C and the fridge sits next to a chargrill, recovery will be slow even after a clean. Shops with glass-door merchandisers packed tight against a wall see the same pattern. Clearing the coil sometimes restores the last two degrees. Sometimes the fan motor has already failed.

Check 3: Door seals, lights and loading

A torn gasket on a Williams, Foster, Polar, True, Blizzard, Gram or Lec catering fridge lets kitchen air in all service. Paper-in-the-door is the test. Overloading a prep rail so lids cannot close is an operations issue, not a compressor issue. Interior lights left on in a display fridge add heat. Pubs that leave the back-bar door open for speed will report a commercial fridge not cooling every Friday night. Close it. If the magnet still will not hold, you need a seal, not a lecture.

Check 4: Ice on the evaporator and drain

Open the inner liner. A film of frost is normal. A block over the fan is not. Ice is insulation. The coil cannot take heat out, so the thermostat keeps calling and the cabinet warms. Isolate power and allow a controlled defrost. Do not chip with a knife. If ice returns the next day, defrost, drain or gasket work is due. That is a commercial call-out, not a household defrost button.

Check 5: Controller, set point and power

After a power cut, some boards boot to a warmer set point. Staff then say the commercial fridge not cooling when it is simply set to plus 8. Photograph the display and data plate. Check the isolator and plug. A silent compressor with a warm cabinet and a clear coil is past DIY. Relays, capacitors and compressors are engineer jobs. Adding refrigerant without a leak test is not a staff task and is illegal without F-Gas competence.

What not to do

Do not keep adding chilled deliveries to a cabinet that is already at 10°C. Do not move high-risk food into a freezer “for an hour” without a plan for thaw and records. Do not buy a random thermostat from a marketplace and expect it to match a Dixell or Carel board. Do not call a domestic appliance firm for a stainless catering fridge. Cold Direct will not attend a Bosch or Beko in a flat.

When to stop checking and call

Call if product is still above 8°C after the five checks, if you hear the compressor short-cycle, if there is a pool of water under a prep fridge, or if an alarm will not clear. If the five checks restored temperature, keep the condenser on a weekly wipe and the door closed between picks. If they did not, stop experimenting and book the engineer. A warm commercial fridge in a restaurant, pub, takeaway, cafe, shop or hotel is cheaper to fix today than after an EHO visit tomorrow.
