Why ice appears on a trade freezer
Moisture plus a surface below freezing equals ice. In a commercial kitchen that moisture comes from door openings, wet boxes, steam from a pass and torn gaskets. A light frost film after Friday service is normal. A solid block over the coil, ice on the ceiling of the cabinet, or a door that will not close because of a ridge of ice is a fault. Staff often scrape ice and reopen the same cabinet an hour later. That cycle hides the cause and can puncture the liner. Power down, catch melt water, then work through the five causes below before you assume the compressor has failed.
Cause 1: Door seal and door heater
Close a sheet of paper in the door. If it slides out with no grip, kitchen air is leaking in all day. A torn gasket on a Williams, Foster, Polar or True catering freezer is the most common reason a commercial freezer ices up around the frame. Pubs and takeaways that slam doors during service wear the magnet strip first. Door-frame heaters that have failed leave a wet stripe that freezes into a wedge. Wipe grease off the rubber. If the magnet no longer pulls evenly, you need a replacement profile, not another cloth. Do not tape a domestic gasket onto a trade cabinet.
Cause 2: Defrost heater, timer or probe
Automatic defrost melts frost on a schedule. If the heater, drain heater or timer fails, frost becomes a block. The fans then throw ice chips onto product. Cause 3: Blocked evaporator drain
Melt water has to leave the coil tray. Food debris, ice in the drain and a failed drain heater send water back into the fan. Ice then grows from the bottom of the liner. Do not poke a screwdriver into a drain that sits next to a live heater.
Cause 4: Kitchen humidity and door discipline
A takeaway pass at 35°C with the freezer door wedged open while staff pick bags will ice any healthy cabinet. Cafes that load warm pastry, shops that restock from a wet delivery, and hotel banquet stores that stand open during plating all add kilos of moisture. Train the close-the-door habit. It will not fix a torn gasket, but it stops a good freezer looking like a failed one.
Cause 5: Refrigerant leak and iced suction
A leak can leave one patch of the coil arctic and the rest of the cabinet warm. Ice forms in a stripe, not a uniform film.
