Advice for kitchens and shops

Why Is My Commercial Freezer Not Freezing?

A commercial freezer not freezing is a stock problem first and a plant problem second. Soft ice cream, wet boxes and a display that sits at minus 8 instead of minus 18 mean you are already losing money. This guide is for trade uprights, under-counters and chests in London kitchens. It is not a DIY recharge manual. It tells a duty manager what to check in the next twenty minutes, and when to stop and book commercial freezer repair London.

What “not freezing” actually means

Staff often say a commercial freezer not freezing when the fans are still spinning. That is useful. A silent cabinet with a warm evaporator is a different fault from a noisy cabinet that cannot pull down. Probe product in the middle of a box, not the air at the door. Minus 15 on the display and minus 6 in chicken is a food-safety issue, not a “wait until morning” issue.

Most catering freezers are designed to hold minus 18 to minus 22 in a kitchen that is already hot. If the room is 32 degrees and the condenser is caked in flour, the cabinet will run all day and still look like a commercial freezer not freezing. Clearing the grille sometimes restores the last few degrees. Sometimes it does not.

Five checks before you call

1. Condenser and airflow

Pull the kick plate if you can do it safely. A grey felt of grease on the condenser coil is the Saturday classic. Vacuum the lint if the unit is isolated. Do not hose a live electrical tray. Leave 10 cm of air behind the cabinet. Boxes stacked against the grille are enough to stop a healthy compressor from rejecting heat.

2. Ice on the evaporator

Open the inner liner. A light frost film after Friday service is normal. A solid block over the fan blades is not. Ice is insulation. The coil cannot take heat out of the air, so the thermostat keeps calling and the food warms. Do not chip with a knife. Power down, door open, trays on the floor, then see whether a commercial freezer not freezing starts to recover after a full defrost. If ice returns the next day, the gasket, drain or defrost heater has failed.

3. Door seal and door heat

Close a sheet of paper in the door. If it slides out with no grip, moist kitchen air is leaking in all day. A torn gasket or a dead door heater leaves a wet stripe of ice on the frame. That moisture then freezes on the coil. Wipe grease off the rubber. If the magnet no longer pulls evenly, you need a replacement profile, not another wipe.

4. Controller and set point

After a power cut, some Dixell and Carel controllers boot to a chill set point. Staff then report a commercial freezer not freezing when the board is simply asking for plus 2. Photograph the display and the data plate. If the set point is minus 18 and the coil is clear, the fault is further in: sensor, relay or compressor.

5. Compressor and charge

A compressor that is hot, cycling every minute, or silent with a warm suction line is not a staff job. Low refrigerant after a leak looks like “it just got warm”. Adding gas without a leak test is how the same cabinet fails again next week. That work needs an F-Gas engineer.

What not to do

Do not leave the door ajar “to defrost faster” over a full load of meat. Do not run a hairdryer into a plastic liner. Do not keep adding stock to a cabinet that is already above minus 12. Do not assume a second thermostat from a parts website will match your controller. If you need attendance tonight, use commercial freezer repair London rather than waiting for a weekday slot.

When the problem is a walk-in, not a cabinet

A walk-in that is a commercial freezer not freezing often has a different cause: a failed evaporator fan, a door left on the latch, or a condenser on a hot roof. Cabinets and rooms share refrigerant logic but not the same page. Walk-in plant is booked on freezer room repair. Glass-door shop merchandisers still count as cabinets.

Food you can still save

Keep the door shut until you have a plan. Move high-risk items if you have a second freezer that is still at minus 18. Probe cores. Follow your own HACCP rules. An engineer can tell you whether the plant will recover in an hour or whether you should hire a cabinet. They cannot legally tell you to sell food that has been in the danger zone.

What Cold Direct does on arrival

We measure air on and off the coil, check the condenser, weigh or assess the charge if the symptoms say leak, and quote before a long repair. Emergency freezer repair from North London is typically two to four hours across Greater London. The booking page for trade cabinets is commercial freezer repair London. Shorter search: freezer repair London.
