Why Is My Commercial Fridge Not Cold Enough?

A commercial fridge not cold enough is a food-safety problem first. Soft dairy, warm cooked rice and a display that sits at 10 °C instead of 3 °C mean you are already taking a risk. This guide is for trade uprights, prep counters and under-counters in London kitchens. It is not a DIY recharge manual. What “not cold enough” actually means

Staff often say a commercial fridge not cold enough when the fans are still spinning. That is useful. A silent cabinet with a warm evaporator is a different fault from a noisy cabinet that cannot pull down. Five checks before you call

1. Condenser and airflow

Leave 10 cm of air behind the cabinet. Boxes stacked against the grille are enough to stop a healthy compressor from rejecting heat.

2. Door seal

Close a sheet of paper in the door. If it slides out with no grip, moist kitchen air is leaking in all day. Wipe grease off the rubber. If the magnet no longer pulls evenly, you need a replacement profile, not another wipe. A torn gasket is a common reason a commercial fridge not cold enough still “sounds fine”.

3. Ice on the evaporator

Open the inner liner. A light frost film after Friday service can be normal. A solid block over the fan blades is not. Ice is insulation. The coil cannot take heat out of the air, so the thermostat keeps calling and the food warms. Power down and let ice melt into trays. If ice returns the next day, the gasket, drain or defrost system has failed.

4. Controller and set point

After a power cut, some Dixell and Carel controllers boot to a warmer set point. Staff then report a commercial fridge not cold enough when the board is simply asking for 8 °C. Photograph the display and the data plate. If the set point is 2 °C and the coil is clear, the fault is further in: sensor, relay or compressor.

5. Compressor and charge

A compressor that is hot, cycling every minute, or silent with a warm suction line is not a staff job. Low refrigerant after a leak looks like “it just got warm”. Adding gas without a leak test is how the same cabinet fails again next week. That work needs an F-Gas engineer.

What not to do

Do not keep adding warm prep into a cabinet that is already above 8 °C. Do not cover the shelves with cling film so air cannot move. When the problem is a walk-in, not a cabinet
