How a blast freeze cycle is supposed to work

A probe goes into the slowest-cooling pack. The controller runs high fan speed and a low evaporator temperature until the core hits the set point, often minus 18. The cabinet then holds or beeps. If the probe is clipped to a rack instead of buried in product, the cycle ends while the centre of a lasagne is still warm. That is an operator fault we will name. If the probe is correct and the cycle still times out, we look at ice on the coil, a weak charge, a failing compressor, a blocked condenser or a fan that cannot throw air through a overloaded trolley.
