Why Is My Commercial Freezer Icing Up?

Thick ice on a trade freezer is a warning, not a quirky extra layer of cold. When frost coats the evaporator, door frame or floor, the cabinet is already working harder, using more electricity, and heading towards a warm load. Kitchen staff in North London often first notice stuck drawers, a door that will not close, or frozen food that feels soft at the edges.

This guide is for uprights, under-counters and small walk-in freezer rooms used in restaurants, pubs and shops. It is not a sales page for a call-out. It explains what ice is doing, which checks a duty manager can run today, and when you should stop defrosting and book a trade engineer.

Is Some Ice Normal?

A faint white film on the evaporator after a busy Friday is ordinary. Staff open the door dozens of times. Each opening lets kitchen humidity in. The coil is designed to collect that moisture and shed it during a timed or demand defrost.

What is not ordinary is ice you can chip in slabs. Look for these signs: ice bridging the fan blades; ice on the inner door liner; a ridge of ice along the threshold; water on the floor after close; or a cabinet that never quite reaches the −18 °C most frozen storage needs. Those patterns mean moisture is entering faster than the defrost system can clear it, or the defrost system itself has failed.

Auto-defrost cabinets should run a heater cycle without anyone noticing. Manual-defrost chests still exist in some stores. If yours is manual, a planned empty-and-defrost every few weeks is part of running it. If it is auto-defrost and you are still hacking ice every other morning, treat that as a fault.

Food safety sits behind the frost. Ice acts as insulation. The coil cannot absorb heat from the air, so the thermostat keeps calling for cooling, the compressor runs longer, and product temperature drifts. That is how a “still frozen looking” tray of chicken becomes a waste bin job after an EHO probe check.

Faulty door seal

The gasket is the first place to look. A split, flattened or oily seal lets warm air leak in a thin stream all day. You will often see a vertical stripe of ice on the hinge side or a wet patch on the floor in front of the door. Close a piece of paper in the door. If it slides out with no grip, the gasket has lost tension.

Cleaning helps. Food grease hardens rubber. Wipe the seal with warm soapy water and dry it. If the magnet no longer pulls evenly, you need a replacement, not another wipe. Blocked drain

During defrost, melt water should run down a trough and out a drain tube to a pan. Fat, labels and ice plugs block that tube. Water then refreezes in the base, under the evaporator tray, or around the door. A cabinet that “floods” after you switch it off often has a blocked drain rather than a refrigerant leak.

You can sometimes clear a warm-water flush from the inside trough while the unit is isolated. Do not force wire down a plastic pipe. If the drain heater (where fitted) has failed, the plug will form again on the next cycle.

Door left open

Service pressure is the most human cause. A prep cook wedges the door while plating desserts. A delivery leaves the walk-in ajar. Ten minutes of kitchen air is enough to load the coil with moisture. Some sites fit a simple door-open alarm. If you have one and staff mute it every shift, the alarm is not doing its job.

Check the closer and the latch. A closer that does not pull the last centimetre is as bad as a wedge. On glass-door merchandisers, a misaligned strike plate does the same thing.

Faulty defrost heater

If the heater, timer, termination thermostat or controller channel fails, frost never leaves the coil. The fan then pushes air through a block of ice. Temperatures climb even though the compressor sounds busy. An engineer will test heater resistance and look at the controller’s defrost history. This is not a “turn it off overnight” fix if the same ice returns the next afternoon.

Overstocking

Boxes stacked against the evaporator grille stop air moving. Warm pockets form at the door; the coil ices because return air is poorly distributed. Leave the manufacturer’s clearances. Do not store cardboard hard against the back wall. Rotate older stock forward so staff are not holding the door open hunting for a label at the back.

New deliveries are another trap. A rush of ambient-temperature product dumps heat and moisture into the cabinet. Stage deliveries, or use a blast freezer if you have one, instead of cramming a warm pallet into a cabinet that was already borderline.

Quick Fix You Can Try Today

If the cabinet is still holding safe product temperature, you can attempt a controlled defrost before you book a van. Isolate power at the isolator, not by yanking a plug that staff might stand in water to reach. Empty perishable stock into a working freezer or a cool box with gel packs. Leave the door open. Put trays on the floor to catch melt. Allow hours, not minutes.

While it thaws, clean the gasket, check the drain outlet, and look at the condenser (usually at the base or on top). A blanket of fluff on the condenser makes the whole system run long cycles, which can add to icing on some designs. Vacuum the guard if you can reach it safely. Do not bend fins with a knife.

When you restore power, note the time and the displayed temperature. If ice is back within 24–48 hours, stop repeating the ritual. Repeated DIY defrosts waste labour and hide a heater or seal fault until a Saturday service collapse.

When to Call Engineer

Call a refrigeration engineer if ice returns quickly, if the fan is silent or screaming, if you smell burnt electrics, if the compressor is hot and the cabinet is warm, or if you cannot empty the unit safely. Walk-in rooms with ice on the evaporator need a trade visit; the refrigerant circuit and heaters are not DIY.

Do not keep trading from a cabinet that cannot hold −18 °C. Move stock first, then book the repair. A few hours of organised transfer beats a bin of spoiled product and an insurance argument about “we thought the ice meant it was extra cold”.

If you run more than one freezer, note which cabinet ices and on which days. A pattern after deliveries usually means a door habit, not a dying compressor.
