UK food safety law requires frozen food to be stored at minus 18 degrees or colder. The cabinet air temperature should hold between minus 18 and minus 22. If the cabinet drifts above minus 15, the product is entering the "partial thaw" zone: ice crystals grow, texture degrades, and the shelf life shortens. How to probe a commercial freezer
Probe the core of the product, not the air between packs. The air temperature at the door can read 10 degrees warmer than the product at the back when the door opens during service. Push a probe between two packs or into the centre of a frozen block. Wait 30 seconds for the reading to stabilise. Record the temperature, the time, the product probed and your initials.
A calibrated digital probe is the only tool an EHO accepts. What to do while you wait for an engineer
Keep the door closed. Every opening lets warm air in and pushes the cabinet further from recovery. Do not add stock to a warming cabinet. If you have a backup freezer or a hire cabinet, move high-risk product there. If the product is already above minus 10, probe each pack: anything soft to the touch has partially thawed and should be discarded or used immediately under your food safety policy. Do not refreeze partially thawed product — the texture and safety are already compromised.
