A commercial freezer icing up is not a “leave it overnight” job in a restaurant, pub, takeaway, cafe, shop or hotel. Ice on the evaporator, door frame or product is insulation. It stops cold air moving, lifts core temperatures and wrecks HACCP logs. This article is for trade uprights, chests and under-counters. Cold Direct does not repair household freezers. If ice is locking the fan or stock is above minus 18, book freezer repair London or commercial freezer repair London on 07983 759320.
Where is the ice forming?
The location is a useful clue, not a diagnosis. Check only what you can see safely; do not reach near a fan or dismantle the cabinet.
| Where you see ice | Possible cause to check |
|---|---|
| Evaporator coil or fan area | Defrost fault, blocked airflow or excess moisture entering during service. |
| Door edge or frame | Worn or dirty gasket, a door that is not closing fully, or frequent long openings. |
| Cabinet base or floor | Defrost water may not be draining away and can refreeze. |
Note the location, when the ice returns, and whether the door closes evenly. Those details help an engineer narrow down the fault.
Why ice appears on a trade freezer
Moisture plus a surface below freezing equals ice. In a commercial kitchen that moisture comes from door openings, wet boxes, steam from a pass and torn gaskets. A light frost film after Friday service is normal. A solid block over the coil, ice on the ceiling of the cabinet, or a door that will not close because of a ridge of ice is a fault. Staff often scrape ice and reopen the same cabinet an hour later. That cycle hides the cause and can puncture the liner. Power down, catch melt water, then work through the five causes below before you assume the compressor has failed.
Cause 1: Door seal and door heater
Close a sheet of paper in the door. If it slides out with no grip, kitchen air is leaking in all day. A torn gasket on a Williams, Foster, Polar or True catering freezer is the most common reason a commercial freezer ices up around the frame. Pubs and takeaways that slam doors during service wear the magnet strip first. Door-frame heaters that have failed leave a wet stripe that freezes into a wedge. Wipe grease off the rubber. If the magnet no longer pulls evenly, you need a replacement profile, not another cloth. Do not tape a domestic gasket onto a trade cabinet.
Cause 2: Defrost heater, timer or probe
Automatic defrost melts frost on a schedule. If the heater, drain heater or timer fails, frost becomes a block. The fans then throw ice chips onto product. Controllers that skip defrost after a power cut look like “it iced up overnight”. Photograph the error code. A commercial freezer icing up every morning after a clean coil is usually defrost, not “needs more gas”.
Cause 3: Blocked evaporator drain
Melt water has to leave the coil tray. Food debris, ice in the drain and a failed drain heater send water back into the fan. Ice then grows from the bottom of the liner. Hotels and restaurants that store open sauces in the freezer see this weekly. Clear only what you can see with the power isolated. Do not poke a screwdriver into a drain that sits next to a live heater.
Cause 4: Kitchen humidity and door discipline
A takeaway pass at 35°C with the freezer door wedged open while staff pick bags will ice any healthy cabinet. Cafes that load warm pastry, shops that restock from a wet delivery, and hotel banquet stores that stand open during plating all add kilos of moisture. Train the close-the-door habit. It will not fix a torn gasket, but it stops a good freezer looking like a failed one.
Cause 5: Refrigerant leak and iced suction
A leak can leave one patch of the coil arctic and the rest of the cabinet warm. Ice forms in a stripe, not a uniform film. Adding gas without a leak test is illegal for unlicensed people and usually fails again. That is F-Gas work for a commercial freezer engineer. Cold Direct diagnoses leaks on trade plant only. We do not do household repairs.
Safe first steps for the duty manager
Keep the door shut until you have a plan. Move high-risk frozen food to a second cabinet that is still at minus 18 if you have one. Probe product cores, not air at the door. Isolate power if you intend a full defrost. Catch water so it does not flood a kitchen floor. Do not chip ice. Do not run a hairdryer into a plastic liner. If ice returns within 24 hours of a complete melt, stop and call. Contact Cold Direct to confirm current engineer availability and an estimated arrival window.
FAQ: icing causes
Why is my commercial freezer icing up?
Door seals, failed defrost, blocked drains, humidity from open doors, or a refrigerant leak. Ice is the symptom. The cause needs a trade diagnosis.
Is icing always a compressor fault?
No. Most icing we see in restaurants, pubs, takeaways, cafes, shops and hotels is air leaks or defrost, not a dead compressor.
Do you repair domestic freezers that ice up?
No. Cold Direct is commercial only. We do not do household repairs.
